  • The Vermillion Room offers an extravagant brunch with Canadian and international favourites. Made-to-order omelettes, waffles, fresh crab legs, eggs benedict, house-made donuts and more.


  • Sandwich au Boeuf et aux Oignons Caramélisés: prime rib of beef, caramelized onion & tarragon jam, natural pan jus
  • Baguette au Brie et Roquette: french brie, arugula, pickled onions, apple-tomato jam, baguette
  • Le Royal Avec Fromage: Alberta beef, three year aged cheddar, garlic aioli, onion rings, brioche, pickles
