Located off the lobby of the Royal Canadian Lodge, this hidden gem is too often overlooked by visitors. The Evergreen Restaurant & Lounge delivers elegance, comfort and the best of Canadian cuisine. Executive chef Stefan Hoos and his expert culinary team transform local ingredients into globally influenced dishes that highlight the flavours of Alberta. Seasonal, locally themed specials change during the year.

Atmosphere

This Banff restaurant features an open kitchen. The dining room is both elegant with linen tablecloths and cozy with a roaring fire. The relaxed lounge offers lots of natural light, a big screen showing sports and high seats at the counter.

  • Royal Canadian Lodge Classic: 2 fresh eggs any style, savoury Yukon gold potatoes, 2 country breakfast sausage, 2 bacon strips and a choice of bagel or toast
  • Mountain Sunrise Omelette: 3 fresh eggs with red peppers, mushrooms, tomatoes, green onion, ham & cheese, savour baby Canadian potatoes & choice of bagel or toast
  • Healthy Hiker’s Breakfast: fresh fruit salad, mango-orange coulis, maple granola, scrambled eggs, local farm yogurt and multigrain toast
  • Atlantic Smoked Salmon Bagel: with pickled onions, caper berries, light dill Philadelphia cream cheese, savoury baby Canadian potatoes and fresh fruit
  • Blueberry or Strawberry Buttermilk Pancakes: 3 fluffy pancakes with your choice of flavours
  • Chorizo Eggs Benedict: 2 farm fresh eggs with chorizo sausage patties, roasted red peppers, guacamole and hollandaise sauce served with Yukon gold potatoes.
  • The Evergreen Poached Eggs: Crispy Yukon gold potato cake, 2 soft poached eggs, braised spinach, leek and bell peppers, spicy tomato sauce and fresh arugula
  • Southwestern Style Breakfast Burrito: flour tortilla, green onions, bell peppers, chorizo sausages, scramble eggs, cheddar cheese, house-made fresh salsa and refried black beans served with Yukon gold potatoes.
  • Classic French Toast: 2 thick slices of brioche bread served with strawberry compote, Quebec maple syrup and fresh daily fruit
  • Breakfast Buffet: seasonal fruits, pastries, yogurt, cereal with optional eggs, pancakes, bacon & sausages. Served with Starbucks coffee, Tazo tea & Tropicana juice

  • Evergreen Signature Fire Roasted Tomato Soup: accented with a basil oil, heavy cream drizzle & smoked bacon
  • Fresh Tuscan Lettuce & Arugula Beets Salad: Feta cheese, fine julienne carrots, candied pecans, apple cider vinaigrette
  • Crispy Chicken Wings Slate: choice of Chili lime, salt & pepper, B.B.Q or Frank’s hot sauce, all served with peppercorn ranch
  • Flatbreads: including grilled tomato flatbread and meat flatbread
  • Royal Canadian Lodge Burger: hand pressed burger, charbroiled, served on a toasted brioche bun with our grill sauce, topped with tomato, sliced red onion, dill pickle and finished with cheddar cheese. Additional bacon optional
  • Bow River Grilled Chicken Burger: olive oil & fresh herbs marinated chicken breast, fresh lettuce, guacamole, tomato and cheddar cheese on a toasted brioche bun
