Experience an authentic taste of Italy at this restaurant with exquisite cuisine that reflects the Fairmont’s farm-to-table philosophy. Locally sourced, organic and sustainable products are used whenever possible. All pasta is handmade by Canmore Pasta Co. Favourite ingredients include Valbella Canmore cured meats, Fairwinds Farm cheese and Hotchkiss Farms produce. The wine list allows a meaningful exploration of Italy’s wine regions and smaller producers.
Atmosphere
Castello Ristorante has an elegant Italian courtyard setting. Since this intimate venue is a Fairmont hotel favourite with a large and loyal following, reservations are highly recommended. The dress code is smart casual. The restaurant is beside the Ramsay Lounge; sit at the mahogany bar and enjoy a pre-dinner drink.
