Located off the lobby of the Delta Banff Royal Canadian Lodge, this hidden gem is too often overlooked by visitors. The Evergreen Restaurant & Lounge delivers “elegance without attitude” and the best of Canadian cuisine. Executive chef Stefan Hoos and his expert culinary team transform local ingredients into globally influenced dishes that highlight the flavours of Alberta. Seasonal, locally themed specials change during the year.

Atmosphere

This Banff restaurant features an open kitchen. The dining room is both elegant with linen tablecloths and cozy with a roaring fire. The relaxed lounge offers lots of natural light, a big screen showing sports and high seats at the counter.

Breakfast & Lunch Menu Samples

  • Breakfast: Mountain Sunrise Omelette; Classic Eggs Benedict; Steak and Eggs; Blueberry Buttermilk Pancakes; Healthy Hiker’s Breakfast
  • Warm Goat Cheese Salad: fried goat cheese, pumpkin seeds and pear dressing
  • Bow River Grilled Chicken Sandwich: toasted baguette, tzatziki, smoked Gouda
  • Royal Canadian Lodge Burger: toasted brioche bun, smoked Gouda
  • Garden Tomato Flatbread: mozzarella, shaved Parmesan

Dinner Menu Samples

  • Small Plates: daily soup, Caprese salad
  • Woodland Style Elk Loin with red wine sauce and wild mushrooms
  • Lac Brome Duck Harvest Style: served with black berry compote
  • Pan Seared Canadian Arctic Char with Pernod cream sauce
  • Supreme of Chicken Genovese with tarragon red wine sauce
  • AAA Alberta steak (with seasonal vegetables and choice of baked potato, oven roasted potatoes, Basmati rice or hand cut potato frites): beef tenderloin filet, ribeye, New York striploin
  • Desserts: Chocolate Sacher Torte; homemade ice cream and sorbet

Mains: $22 to $42; lunch $12 to $25; breakfast $10 to $21

Drinks: wines $30 to $120 by the bottle, $9 to $12 by the glass
